Spinach, a flowering plant of the family Amaranthaceae, is native to central and southwestern Asia. It's got lots of iron and calcium, but it's hard for the human body to break it down. Fortunately, spinach is a rich source of Vitamin A, Vitamin C, Vitamin E and several vital antioxidants and it's tasty with olive oil, garlic and other strong flavours or alone. If you're not careful, spinach has been known to walk out on you when you're not looking, and it has a tendency to EAT YOU!
